Jelen OTKA pályázat fő célkitűzése a biológiai, elsősorban élelmiszeripari alapanyagok egyik legfontosabb fizikai tulajdonságának: a vízkötési potenciálnak kimérése és az eddigi – nedvesség gradiensen alapuló - hőfizikai modellek kijavítása ill. pontosítása. A mérések komplexitása miatt ilyen vizsgálatokat eddig nemzetközi szinten sem végeztek, annak ellenére, hogy elméleti szinten a korrekt matematikai leírás már több ötven éve ismert. A pályázat során, többek között, talajtani (ahol jelen tulajdonság - mint pF érték - már régóta ismert és használt) vizsgálati módszerekkel végeznénk méréssorozatokat a különböző alapanyagokat; majd az eredményekkel a meglévő – Intézetünk által kifejlesztett és használt – matematikai modelleket pontosítanák.
Summary
The basic aim of this project is to measure one of the most important physical characteristics of biological, first of all food basic materials that is the water potential. Using the measured water potential values the present mathematical models –based on moisture gradient as the drying force – can be rewritten and/or refined. So far this kind of measurements has not been done in spite of that the theoretical background of water potential gradient based modeling has already existed fro more than 50 years. During the project water potential measurements are being carried out using a reconstructed and enhanced tool utilized by soil science, namely the Pressure Plate Extractor. In soil science they consider it for a long time as pF values. Using the measured date of different food commodities the finite element mathematical models will be enhanced and rewritten.

Jelen OTKA pályázat teljesítette a célkitűzéseiben megfogalmazott feladatokat. A kutatás végcélja volt a száradási folyamatokat leíró hő- és anyagtranszport végeselemes modellek pontosítása, ill. átdolgozása egyrészt vízkötési potenciállal, mint gradienssel történő számolással, másrészt a hőtranszport folyamatok ellenőrzése infrakamerával. A vízkötési potenciál értékek modellekben történő alkalmazásához szükség volt ezek kísérletes meghatározására. Számos sikertelen próbálkozás és kísérletezés után sikerült (a talajtanban alkalmazott) korrekt mérési metodikát kidolgozni a különböző biológiai anyagok és azok alkotórészeinek mérésére, és ezek alapján pedig a pF görbék megadására. Legnehezebb faladat volt a biológiai (élő) anyagok sterilizálása a mérések során fellépő mikrobiológiai bomlási folyamatok megakadályozása céljából. Az anyagtranszport folyamatokat leíró matematikai modellek pontosítása után szükséges volt ezek ellenőrzése, amely megtörtént a legkorszerűbb mágneses rezonancia leképező berendezéssel. Az infrakamerás vizsgálatok során figyelembe vettük az anyagok geometriájából adódó infravörös sugárzásintenzitás különbségeket is. A pályázat támogatásával a végeselemes szoftvercsomag legfrissebb verziójával rendelkezünk, valamint kísérleti eszközparkunk is jelentősen korszerűsödött.

This present OTKA project fulfilled the proposed aims. The final aim of this research was to enhance and re-modify the present heat and mass transfer mathematical finite element models of drying materials so that the water potential values would be the driving force of mass transfer and the infrared images would verify the heat transfer models. In order to use water potential values in the models it was needed to experimentally determine them. After several unsuccessful trying an adequate method (borrowed from soil science) was developed to measure water potential values of different biological materials and their constituents properly. Concerning this measurement the most difficult task was to sterilize the living biological materials to prevent the microbiological deterioration. After reforming the mathematical mass transfer finite element models their evaluation was carried out by the most up-to-date magnetic resonance imaging equipment. During infrared imaging the radiation changes due to shape differences was taken into account. By the OTKA support the latest version of finite element software package is available at our institute and our experimental facilities were also updated.
